The Story

Inspired by her favorite French dish, “L’Entrecôte”, Nouel Estrella decides to open Miami’s first French bistro in 1994.

“L’Entrecôte de Paris” became one of the hottest restaurants on the beach for offering the delights of french cuisine in a typical parisian setting.

The secret is in the sauce was the restaurant’s slogan. Nouel knew that her business success was due to the sauce she invented during her years in Paris and her passion for food.

Susana Nouel Estrella Perry from Dominican Republic was raised between Haiti and Paris. She spent her childhood traveling due to her mother’s diplomatic career. These experiences led her to a world of culinary possibilities and gave her the vision to open her own restaurant.

During her time in Paris she discovered “L’Entrecôte” and it became her favorite dish. She moved to Miami in the early 90’s when French restaurants were limited. Nouel’s vision was a place that offered a simple menu: steak and french fries with her delicious sauce in a traditional French bistro setting at a friendly price.

For more than a decade, “L’Entrecôte de Paris” was located in the famous Washington Avenue on Miami Beach. Celebrities such as Sylvester Stallone, Marc Anthony, Liza Minelli, Enrique Iglesias, Chayanne and Gloria Estefan were frequent guests.

After 13 years, Nouel decided to experience a new chapter and moved to Ibiza before deciding to return to the Dominican Republic to spend time with her relatives. She later partnered with the top hotel in Punta Cana to offer “L’Entrecôte Nights”. Additionally, she became a consultant for restaurants and events. Nouel realized she needed to take the next step and share the sauce that has accompanied her success for more than two decades.

Recipe

Ingredients

  • 8 oz of steak per person. We suggest New York Steak.

  • Olive oil as desired.

  • Salt and pepper to taste.

  • 2 tablespoons of “Nouel’s Secret Sauce” per steak.

Directions

Remove the meat from the fridge 30 minutes before cooking.

At room temperature rub the olive oil, salt and pepper on both sides of the steak.

Let it sit for 20 minutes for better flavor.

Grill the steak to your preference. Trim the fat on the sides to create a perfect rectangle.

Finally slice each steak, place on the plate and pour the sauce at room temperature. If sauce was taken out of the fridge heat it on a skillet for 2 minutes or in the microwave for 35 seconds.

We suggest you serve “L’Entrecôte” with french fries and a green salad.

We recommend green salad with chopped walnuts and vinaigrette dressing of your choice.
